Ottobratico is medium fruity: fresh and smooth on entry, with balanced bitterness and pungency and a distinct peppery finish. It brings freshness to food without overwhelming it.
Use it anywhere you cook. Ottobratico is suitable for sautéing and roasting as well as for raw use over salads, vegetables, legumes, soups, bread and finished dishes. Cooking is not a compromise; using it raw simply keeps the aroma and the peppery finish at their most pronounced.
Ottobratico is made from 100% Ottobratica olives grown by the Cosmano family in Molochio, Calabria, Southern Italy. The olives are harvested in October and Cold-Extracted within 4 hours of harvest at the estate, keeping the distance between tree and mill deliberately short.
