Origin and Olive Varieties

Origin: Single-estate. The Cosmano family farm in Molochio, Southern Italy — Aspromonte National Park, UNESCO Global Geopark, 450 meters above sea level. Not blended with oils from other farms or countries.

Variety: 100% Sinopolese — a native cultivar of the Reggio Calabria province, harvested later in the season (November–December) for a rounder, more balanced profile than early-harvest varieties. The Sinopolese is Deliba's everyday oil: suited for moderate heat cooking and raw finishing alike.

Harvest: 2025/26 season, November–December 2025. Hand-harvested at the estate.

Cold-Pressed

The Sinopolese is cold-pressed within 4 hours of harvest on the Cosmano family estate — there is no transport time between picking and pressing. Transport delay is the most common source of polyphenol loss in commercial olive oil production.

Cold extraction means the oil temperature never exceeds 27°C during pressing. This preserves heat-sensitive phenolic compounds, particularly oleocanthal, which begins to degrade above 40°C.

Extraction yield: approximately 9%, versus an industry average of 14–16%. A lower yield means only the highest-quality first-press oil enters each bottle.

Tasting Notes

Balanced and approachable. The Sinopolese opens with a fruity, slightly sweet note — ripe olive and fresh almond — followed by clean green undertones. The finish is mildly peppery, noticeably softer than the Ottobratico.

That mild pepper at the back of the throat is oleocanthal — a phenolic compound that acts as a natural anti-inflammatory. Its presence confirms the oil's polyphenol content is intact.

Best pairings: eggs, pasta, roasted vegetables, fish, grain bowls, and light dressings. Also excellent as a finishing drizzle over mild dishes where the Ottobratico would overpower.

How to Use

The Sinopolese is designed for daily use across all applications.

Finishing: drizzle raw over pasta, rice, grain bowls, roasted vegetables, and fish. A tablespoon over a warm dish after plating adds richness without overpowering.

Dressings: 3 parts Sinopolese to 1 part acid (lemon or vinegar). Toss and serve — no emulsification needed.

The Sinopolese 2025/26 has a best-before of 24 months from the November 2025 harvest — approximately November 2027. Store in a cool, dark place with the cap closed tight.
