Group gathered under a century-old olive tree at the Deliba estate in Molochio, southern Italy
Why the Duo

One to finish. One to cook.

Same estate, same harvest care — two distinct oils, each built for a different moment. The Duo gives you both, so your kitchen is covered from the pan to the plate.

Deliba Ottobratico extra virgin olive oil, black label
Ottobratico The Finishing Oil · Black Label
629mg/kg

Fresh and smooth, with a balanced kick at the back of the throat. Present, never harsh. The oil you reach for at the end — drizzled raw over salads, stirred into dressings, or poured over a dish just off the heat. Our boldest polyphenol count, harvested in October, built to be tasted, not hidden.

Deliba Sinopolese extra virgin olive oil, white label
Sinopolese The Everyday Oil · White Label
609mg/kg

Light-fruity and delicate, with subtle almond notes and a soft, gentle finish. The oil you cook with — versatile enough for sautéing, pasta and seafood, gentle enough for a salad dressing, dependable every day. Harvested in November, it does the quiet work so the Ottobratico can do the finishing.

Most kitchens end up wanting both. That's the Duo.

Two oils, all day

Where each one belongs.

The way families have used fresh olive oil for generations in Molochio.

  • Ottobratico Morning. A spoonful raw, on its own or with a squeeze of lemon.
  • Sinopolese Cooking. Sautéing, pasta, seafood — your everyday pan oil.
  • Ottobratico Finishing. Drizzled raw over the finished plate, where its character stays alive.

At about 2 tablespoons a day across the two oils, the two-bottle Duo lasts roughly one month. Actual duration depends on how you use it.

The proof — twice

You don't have to trust the label. Read the lab.

Every batch is tested by an accredited independent Italian laboratory — not by us. Both certificates are public. Two oils, two reports, both from this harvest.

Bins of freshly harvested green olives during the Deliba 2025 early harvest in Molochio
Each full bin holds about 330 kg of olives. At our early-harvest yield of just 9%, that bin produces only about 30 liters of oil — and every 500 ml bottle still takes more than 5 kg of fruit.
Why Deliba costs more

More than 5 kg of olives go into every single bottle.

A supermarket olive oil is made for volume. Deliba is made for freshness and verified polyphenols — and that starts with an extraordinary amount of fruit.

330 kg olives in one full bin
9% oil yield from early green harvest
≈ 5.1 kg olives in every 500 ml bottle

To make oil this rich in polyphenols, we harvest early — when the olives are still green. Green olives hold far less oil, so our yield is only about 9%: roughly 9 liters from every 100 kg of fruit.

That means more than 5 kg of hand-picked olives go into every 500 ml bottle. Lower yield is the unavoidable cost of choosing polyphenols and freshness over volume — and one reason Deliba is not priced like ordinary grocery-store oil.

Gianfranco Cosmano, founder of Deliba, in Molochio, Southern Italy
Gianfranco Cosmano — Molochio, Southern Italy.
From Molochio, Southern Italy

One family. One village. One harvest a year.

The Cosmano family has farmed Ottobratica and Sinopolese olives in Molochio since 1967 — a small village in the mountains of Calabria, in Southern Italy.

Molochio is known for something rare: an unusually high number of residents who live past 100. The village was featured in National Geographic, and its everyday diet has long included fresh olive oil as a primary fat — several spoonfuls a day, the way our family still uses it.

Both oils come from that same estate and that same harvest. Every bottle carries its harvest date and its lab report. Nothing hidden — and if there's ever a problem, you're talking to the family that grew it. We document every harvest on our YouTube channel, so you can see exactly where your oil comes from.

To your health,

Gianfranco Cosmano & family

Honest answers

Questions, answered.

Both come from the same family estate. Ottobratico (629 mg/kg, 2025 harvest, Report 37823) is the finishing oil — fresh and smooth with a balanced kick, best raw over salads, in dressings, or after cooking. Sinopolese (609 mg/kg) is the everyday oil — light and delicate, ideal for sautéing, pasta, seafood and salads. The Duo gives you both.

Every bottle shows its harvest date and lot number, and each batch is tested by an independent lab — both certificates are available to download before you buy. Deliba is single-estate, never blended, and Cold-Extracted within 4 hours of harvest.

Your order ships from our New Jersey warehouse — not from Italy. No customs delays. Standard U.S. delivery is 3–5 business days, and shipping is free on boxes of 4 bottles or more.

Yes. Ottobratico is certified at 629 mg/kg and Sinopolese at 609 mg/kg total polyphenols by an accredited independent laboratory. The full Certificate of Analysis is published for every batch — not a marketing number, a lab result.

Keep it in a cool, dark place with the cap closed — never next to the stove or in sunlight. The dark glass protects the oil, but storage still matters. Use each bottle within a few months of opening for the best flavor and polyphenol integrity.
